Sweet & Sour Pork/Adobo

Adobo Main Course

Ingredients: Pork, onions, garlic cloves, soy sauce, vinegar, whole black peppercorns, brown sugar, and water

Slice the onion and pork, then put them into a pot. Add the peeled garlic as well. Add soy sauce and vinegar according to your taste. Add whole black peppercorns and brown sugar, depending on how sweet you like your adobo. If you have bay leaves, add a few too. I ran out of bay leaves at home because I forgot to buy some, so I didn’t add any this time. Add enough water to cover all the ingredients in the pot. Bring everything to a boil over high heat. Once it starts boiling, reduce the heat to medium and let it cook until the pork becomes tender and most of the liquid has evaporated.

You can also add potatoes, carrots, or any other vegetables you like. When I cook, I usually don’t measure everything exactly. I just estimate the amount and adjust the seasonings according to the taste I want.

I love adobo when the pork becomes nicely coated in its own flavorful oil. It’s so delicious with rice! This is a very simple pork adobo. I just used whatever ingredients I had at home. Simple, easy, and delicious!
